Pair Your CSA Farm Share With A Wine Shop Pick At Serenbe

Eating a healthy, balanced meal is super important to overall health, of course. In order to get enough vegetables each day, each meal should consist of about 50% vegetables.You can do that easily with an organic CSA Farm Share from Serenbe Farms. Even though meals are meant to be primarily veggies, there is room for other foods and drinks. If you’re a CSA Member,  the farm team included a delicious recipe for marinated cherry tomatoes and onions, which are both being harvested at the farm right now. It’s perfectly simple and fresh for a hot summer evening and having dinner on the porch. According to Lucas Barry at The Wine Shop, this meal will pair perfectly with a glass of Leirana Albariño, a fantastic white wine from Spain. This wine is bright and sharply focused on the nose, displaying incisive Meyer lemon, honeysuckle and quinine, along with a hint of ginger in the background. Dry, taut and light on its feet, it makes a great pair with light, summery dish such as the marinated cherry tomatoes and onions.

Marinated Cherry Tomatoes & Onions

Ingredients:

  • 1/2 pound ripe cherry tomatoes quartered
  • 1/4 red onion sliced thin
  • 1/2-1 clove garlic smashed and minced into a paste
  • sea salt to taste
  • 1/4 cup quality extra virgin olive oil
  • 1 TBSP red wine vinegar
  • 1 lemon juiced
  • freshly ground black pepper to taste
  • optional fresh basil

Instructions:

  1. Quarter your cherry tomatoes and slice onion into thin strips.
  2. Using the flat side of your knife, smash peeled garlic and mince into a paste. Season with a pinch of salt and add to a bowl with your veggies.
  3. Add olive oil, vinegar, lemon juice, freshly cracked black pepper, and fresh basil if you have some handy! Mix to coat the tomatoes and allow to sit at room temperature for 1-2 hours, stirring occasionally. Enjoy at room temperature and feel free to adjust salt and pepper to taste.
  4. These marinated tomatoes are perfect to add as a side or topping for pretty much any meal. Use them as a salad dressing on top of leafy greens, on avocado toast or plain toast as bruschetta, you can pile it high on top of your favorite protein (we paired it with swordfish, pictured above), or use as a side dish with all your favorite grilled summer veggies. However you try it, you’ll really enjoy!
