Chef Nicolas Bour created a menu that’s both healthy and yummy

Halsa, Serenbe’s newest restaurant, has only been open a month and already packs the house each night for dinner. What is everyone so excited about? It could be the colorful interiors that instantly brighten your mood when you walk in. Or maybe it’s the view of Mado forest from the patio. We’d bet the best part, though, is Chef Nicolas' Bour’s insanely delicious menu.

Chef’s dishes were designed to take advantage of the abundance of organic produce coming off Serenbe Farms. The veggie-forward menu showcases Swedish specialties with small adjustments to fit Halsa’s goal of providing dishes that are healthy and enjoyable at each meal of the day.

For instance, the Swedish meatballs have ground beef and chicken to keep it lighter and most of the dishes also forego flour to make them gluten-free (like the Shrimp Skagan, recipe below).

The beverage menu at Halsa, curated by Abi Shinstine, also features clean ingredients. It’s easy to tell with traditionally “health” drinks such as fresh-squeezed juices and smoothies, but even the wine list, cocktails and mocktails were designed to  include fresh ingredients.

All the wines are from farms that are certified organic or biodynamic, or they’re from sustainable wineries.

SHRIMP SKAGEN OVER A POTATO CAKE

Shrimp Skagan - makes 1 portion

6 16/20 shrimp, poached

¼ cup mayonnaise

3 tsp prepared horseradish

1 tsp lemon zest

2 tsp chopped dill

Dill sprigs for garnish

Salt & Pepper to taste

Potato Cake - makes 6 cakes

6 peeled and grated

3 whole eggs

1 sweet onion grated

Salt & pepper to taste

Vegetable oil for frying

Grate the potatoes into cold water and squeeze as much of the water out of them as possible. In a bowl add the onion, egg and seasoning. Mix well and form a cake out of a handful of the mix. Fry on a flat top with vegetable oil. Mix the shrimp ingredients together and place on top of the cooked potato cake, then garnish with dill sprigs and caviar.
